I came up with this roasted zucchini recipe looking for a way to cook squash where my kids would eat it. They love this one.

A nice side dish that comes together quickly for a weeknight meal. I made half of the recipe and made no other changes. In the future I will up the temp to 400, to get a little more colour, and add double the seasonings. Thanks for sharing your recipe. Read More
