  • 2 ½ pounds baby potatoes, halved

  • 2 tablespoons olive oil

  • 3 cloves garlic, or more to taste

  • 2 sprigs fresh thyme, leaves stripped, or more to taste

  • 1 sprig fresh rosemary, leaves stripped, or more to taste

  • ¾ teaspoon salt

  • ½ teaspoon ground black pepper


  1. Preheat the oven to 475 degrees F (245 degrees C).
