Ingredients

  • 5 (7 ounce) cans shoepeg corn, drained

  • 3 plum tomatoes, seeded and chopped

  • ½ cup thinly sliced green onions

  • ½ cup chopped red bell pepper

  • ½ cup mayonnaise

  • ½ teaspoon salt

  • teaspoon ground black pepper

Directions

  1. Combine corn, tomatoes, green onions, red pepper, mayonnaise, salt, and pepper in a large bowl.

  2. Cover and refrigerate for at least 1 hour before serving.

Cook's Note:

You can use canned white corn instead of shoepeg.
