  1. Combine pineapple, yogurt, coconut milk, and vanilla in a blender and blend until smooth. Pour into ice pop molds and freeze until completely frozen, 4 to 6 hours.


  • Cook's Notes:
  • Use very ripe pineapple for adequate sweetness; canned pineapple also works well. You can add honey to taste if you prefer a sweeter ice pop.
  • I made 6 small ice pops with this recipe, about 2 ounces each.
