Pineapple-Coconut Ice Pops

All fruit and no added sugar in these ice pops means they make a healthier summer treat for kids and adults alike!

  • 1 cup chopped pineapple

  • ½ cup full-fat Greek yogurt

  • cup coconut milk

  • ½ teaspoon vanilla extract (Optional)


  1. Combine pineapple, yogurt, coconut milk, and vanilla in a blender and blend until smooth. Pour into ice pop molds and freeze until completely frozen, 4 to 6 hours.

Cook's Notes:

Use very ripe pineapple for adequate sweetness; canned pineapple also works well. You can add honey to taste if you prefer a sweeter ice pop.

I made 6 small ice pops with this recipe, about 2 ounces each.
