  1. Place pineapple, pineapple juice, sugar, lime juice, vodka, and mint in a food processor and process until smooth.
  2. Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container; put in the freezer for at least 6 hours before serving so it can firm up.


  • Cook's Notes:
  • The vodka helps keep the sorbet soft enough to scoop in the freezer without adding flavor. If you'd like, add a different type of alcohol - experiment with different flavors!
  • Use an additional tablespoon of lime juice if you like your sorbet a bit more sour.
