  • Combine cream cheese, Cheddar cheese, picante sauce, green chiles, and taco seasoning in a large mixing bowl.

  • Spread some of the mixture over most of 1 tortilla, leaving a 1/2-inch border on one side. Roll up. Repeat with remaining tortillas and cream cheese mixture. Cut into 1- to 2-inch sections.

Cook's Note:

A helpful hint when spreading the mixture: Spread mixture on almost all of tortilla, but leave about a 1/2 of an inch on one side without the mix. When you roll the tortilla, the mix has a tendency to spread out and this open gap will be filled with the mix already in the tortilla.

These were delicious and very easy. I added some chopped black olives and green onions because I wanted that extra bit of flavor. The mixture was kind of runny when I prepared them, but after sitting in the fridge for a couple hours, they set up nicely. I waited till then to cut them up. Will definitely make again. Read More

Because the recipe made 40 appetizers, I varied them by adding shredded chicken to 10 of them, olives to another 10 of them, and making 20 as the recipe is written. They were well received and delicious! I will definitely be making these again! Read More

I dislike spicy so I omitted the green chilis. For crunch and a bit of texture I added a very thin layer of finely shredded lettuce and as I was rolling, used a bit of fingertip pressure to keep things together and for security, I skewered the rolls with long bamboo picks onto which I'd pierced whole green and black olives and the smallest cherry tomatoes I could find.
