Chef John's Garlic Scape Pesto


This is one of the most interesting and delicious pesto alternatives that you will ever taste. The recipe is super simple and the hardest part might be finding the garlic scapes themselves. Use as you would traditional pesto.

  • 1 cup roughly chopped garlic scapes

  • 1 lemon, juiced

  • 1 tablespoon white wine vinegar

  • ½ teaspoon kosher salt, or to taste

  • ¼ cup olive oil

  • ¼ cup canola oil

  • ½ cup toasted walnuts


  1. Combine garlic scapes, lemon juice, vinegar, salt, olive oil, canola oil, and walnuts in a blender. Blend into a smooth paste. Adjust seasoning if needed.

Chef's Note:

You can use 1/2 cup olive oil instead of a blend of olive and canola, if it's a very mild variety.
