This is an awesome recipe! The hardest part was de-corning(?) the cobs! But I wanted to try my new 'decorner' tool anyway. I used fresh white corn-on-cob which were on sale. My only substitutions was I added an extra (small) onion mainly to use it before it went bad, and also red wine vinegar to add a tad sweetness. Fantastic! Used all fresh produce from our farmer's market, Roma tomatoes, and a fresh Red Bell Pepper from our garden. Cut olive oil to 1/4 cup, was still creamy! Will definitely add to our must haves! Read More
