Cajun Corn Nuggets

  • 1 ¼ cups yellow cornmeal, or more as needed

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon Cajun seasoning, or more to taste

  • salt and ground black pepper to taste

  • 1 (15.25 ounce) can whole kernel corn, drained

  • 1 (14.75 ounce) can cream-style corn

  • ½ cup finely chopped onion

  • 1 large egg, beaten

  • oil for frying


  1. Combine cornmeal, flour, baking powder, Cajun seasoning, salt, and pepper in a large bowl. Set aside.

  2. Combine whole kernel corn, cream-style corn, onion, and egg in a medium bowl. Add to the dry mixture and mix well. It should be stiff; if not, add a little more cornmeal.

  3. Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Drop batter by spoonfuls into the hot oil and fry in batches until golden on all sides, 2 to 3 minutes. Transfer nuggets to a plate lined with paper towels to drain excess oil.

Cook's Note:

If you don't use it all, you may partially fry the nuggets and freeze for later use or you may drop by spoonfuls onto a well greased cookie sheet and freeze until solid, then transfer to freezer bags. Do not thaw before frying after they've been frozen.
