  • Place the chicken breast, smooth-side up, on a work surface. Holding it down with one palm, slice breast horizontally, stopping 3/4 of the way through. Open like a book. Spread some salsa on one half, then close. Coat with cooking spray and sprinkle with salt and pepper. Transfer to a baking dish and top with more salsa.

  • Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Super simple to make for a quick weeknight meal. This will only be as good as the salsa you use, so use a high-quality brand, or make your own. I used Frontera's Tequila Borracha Salsa. Also, a whole jar of salsa isn't necessary for 1 breast; a jar would be enough for 4. I would recommend seasoning both sides of the chicken before stuffing it, otherwise only the top gets seasoned. Mine was perfectly done at 25 minutes. I feel like it need something extra, and ended up serving it with cheese, green onions and a side of sour cream. Read More
