  • Combine beef, bread crumbs, onion, garlic, and soup mix in a large bowl. Knead the mixture with your hands until well blended; it will be quite dry. Add eggs and Italian dressing and mix. Allow mixture to sit in the refrigerator 10 minutes.

  • Pinch off just enough of the meatball mixture to fit comfortably inside your palm, then roll to form a ball. Repeat with the remaining mixture.

  • Cover the bottom of a skillet lightly with olive oil and heat to medium-high. Add meatballs. Cook on one side for about 4 minutes, then turn and continue to cook until browned and no longer pink in the centers, about 4 minutes more. You may need to cook these in batches depending on how large your skillet is.

Cook's Notes:

Ground turkey or chicken can be used instead of beef.

If meatballs are too small or too large, you can adjust to your liking. The larger meatballs tend to fall apart more than the smaller ones, however.

These were delicious! I thought they might have too much seasoning but it ended out tasting perfect for my family’s taste (we like a lot of seasoning). I had a little bit of trouble keeping some of them together but I probably should have worked in smaller batches (I cooked all at the same time). I served mine with egg noodles and brown gravy. Good recipe although maybe a little dry due to the one cup of bread crumbs. Next time I'll probably add a little less. Otherwise made about 20 meatballs that went a long way. Read More
