I made this cheesy chicken casserole recipe by accident, but it turned into a very happy accident! I thought I was adding sour cream but wasn't paying any attention and ended up adding cream cheese. I will never make it with sour cream again it was so good!

  • Preheat the oven to 400 degrees F (200 degrees C).

  • Mix cream of chicken soup, cream cheese, mozzarella cheese, Cheddar cheese, and mayonnaise together. Mix well and add chicken; make sure cream cheese is fully incorporated. Put into a 9x13-inch glass baking dish. Crush crackers and sprinkle evenly over top of chicken. Dot margarine evenly over crushed up crackers.

  • Bake in the preheated oven until the top is browned and casserole is bubbling, 30 to 45 minutes.

Cook's Note:

You can switch the shredded cheese up with different blends to add something else. You can also add vegetables to make it more veggie-friendly. You can also omit the chicken completely and add only vegetables for something different!

I used pepper jack instead of mozzarella and I used butter instead of margarine, other than that I made the recipe as is. The recipe was very easy and very tasty but also very rich. The next time I’m probably going to add frozen mixed veggies or green beans to cut the richness a bit. Read More
