  • Combine milk and cinnamon stick in a saucepan over medium heat. Bring to a boil, stirring constantly to prevent milk from burning on the bottom. Add sugar and stir for 2 minutes. Add vanilla extract and stir for another 2 minutes.

  • Mix water and cornstarch in a small bowl until no lumps remain. Pour into the boiling milk and stir until thick, about 8 minutes.

Cook's Note:

Don't use imitation vanilla extract.

Authentic atole is made with masa which is corn flour not cornstarch. The taste was good but the consistency was very thick. It was very difficult to drink so I wound up eating this with a spoon. This recipe also makes extremely small servings, more like 2 not 4 servings. Thanks for the recipe but I doubt that I will make this again. Read More
