This Mexican casserole with beef and rice is a super easy recipe for family dinner. Garnish with your favorite toppings. I like to top with shredded lettuce and chopped cilantro! More shredded cheese is always good, too.

  • Heat a large skillet over medium-high heat. Add ground beef and start to brown, then add onion, garlic, and taco seasoning. Cook until beef is no longer pink, 5 to 7 minutes. Drain and discard any excess oil. Add beans, tomatoes, spinach, chicken broth, 1 cup Mexican blend cheese, rice, and salsa. Pour into the prepared casserole dish.

  • Bake in the preheated oven until rice is cooked, 45 to 50 minutes. Take out of the oven, sprinkle with remaining cheese, and bake until cheese is melted, about 10 minutes more.

Cook's Note:

For salsa, use whatever heat you prefer.

This was good. Used a combination of spices because I didn't have taco seasoning: garlic powder, onion powder, cayenne, cumin, chili powder, salt and pepper. Also used two cans of beans because we really like them and let people put their own cheese on top to taste. Took a long time to cook, not sure exactly but it was over an hour. Would also be good with cooked diced chicken I think. Did lack some heat, I added hot sauce to my plate. Maybe some hot peppers added with the onion next time. Read More

I made this casserole according to the directions. It was delicious! Next time I might add 1/4 cup more of the broth, but my family and I enjoyed it as it is. Add some cornbread and a salad and you have a great meal. Read More
