  • Melt butter in a pot over medium-high heat. Add olive oil. Stir in orzo and onion, toss to coat, and cook, stirring frequently, until onions are translucent and orzo is lightly toasted, 4 to 5 minutes. Mix in garlic and cook until fragrant, about 30 seconds.

  • Deglaze pot with white wine and stir until wine has cooked off. Pour in chicken broth and season with salt and pepper. Cook, stirring frequently, until orzo is tender yet firm to the bite, 8 to 10 minutes. Add peas and shrimp with marinade to the pot, cover, and cook, stirring occasionally, until shrimp are light pink, 3 to 4 minutes.

  • Divide between 2 dishes, sprinkle with fresh parsley, and garnish with lemon slices.

I made this during COVID-19 stay at home orders. I decided to use whatever was in my pantry. So I had red onions and spinach instead of peas. I also used whatever white wine I was currently drinking. I didn't have chicken stock, I had vegetable broth. This was so good! I wish I had mushrooms to go along with it. and really quick too. I love spicy foods, so once it was done I threw in some sliced jalapenos and a dash of Cholula. Definitely a repeat dish! I wish i had a photo, but we inhaled it so fast there is nothing but an empty dish. Read More

I'm sorry I don't have any pictures because it disappeared immediately after I was done making it. Very delicious. I also quadrupled the recipe because I knew it was going to go fast. Definitely a keeper. Read More

I followed the recipe except no onions. I did double it plus more shrimp. It was easy and excellent. Had plenty left over so the next night with hubby's suggestion added chicken broth and we had shrimp orzo soup. Next time we are trying with scallops. Definitely a keeper Read More

This is delicious! I used preserved lemons and their juice instead of lemon zest. I also used the shells to make a quick shrimp stock (can be done in the microwave with water ,salt, and shells). It does make it a more than one-pot meal, but the briny flavor in the pasta sauce is out of this world! Read More

This is a super fast and easy recipe and delish!! (even when you do make it with Aboro Rice in error!! Still fab!!). I added more garlic, peas and onions and topped with shaved Parmesan - it was sooooo good! I also made it in the Pressure cooker - did the aboro for 4 minutes on manuel. I'll sooo make this (error!) again! Read More

I left out the red pepper flakes, used bottled lemon juice and dried parsley with whole wheat orzo pasta. I loved it!! I also liked that it only made 2 servings as I made it for myself. Was really good! Read More
