  1. Place carrots, mushrooms, red potatoes, yellow potatoes, onions, sweet potatoes, and green onions into a large pot. Place beef on top of the vegetables; add beer, broth, bay leaves, parsley, salt, and pepper. Cook over medium heat for 30 minutes.
  2. Mix cold water and flour together in a bowl and stir into the pot. Reduce heat to medium-low and let simmer, stirring often, until stew reaches desired consistency and beef is no longer pink, at least 2 1/2 hours.

  • You can also cook this in a slow cooker, but you'll want to use less liquid.
  • The quantities and types of vegetables used in this recipe can be changed to suit what you have in the fridge and it should still turn out delicious.
