Microwave Delicata Squash

Delicata squash can be cooked in the microwave in less than 10 minutes, and there's barely any prep because you don't need to peel it! Add it to a salad or grain bowl, or eat it as a side dish. Vary the dressing to suit whatever you are serving it with.

  • 1 delicata squash, halved lengthwise and seeded

  • ½ cup vegetable broth

  • 1 pinch salt to taste


  • 1 lime, juiced

  • 1 teaspoon white sugar

  • 1 tablespoon Sriracha sauce

  • ½ teaspoon sesame oil

  • ¼ teaspoon fish sauce


  1. Place delicata squash halves, cut-sides down, in a microwave-safe bowl. Pour in vegetable broth, season with salt, and cover with a lid.

  2. Cook in the microwave until squash is easily pierced with a knife, about 8 minutes. Uncover carefully and drain broth. Flip squash and let cool for 5 minutes before cutting into smaller pieces.

  3. Whisk lime juice, sugar, Sriracha sauce, sesame oil, and fish sauce in a small bowl until sugar is dissolved. Pour dressing over squash.
