Reminiscent of the very popular dish King Ranch Chicken in the form a soup. With all the same flavors and the convenience of throwing everything into a slow cooker, this will also quickly become a favorite. Top with fried corn tortilla strips, if desired.

  • Spray a slow cooker with cooking spray. Add onions, bell pepper, and 1 teaspoon salt. Stir in chicken broth, diced tomatoes, condensed soup, and chiles.

  • Combine oil, taco seasoning, 1 teaspoon salt, cumin, and black pepper in a bowl. Add chicken and toss to coat on all sides. Transfer to the slow cooker.

  • Cook on Low until chicken is no longer pink in the center and the juices run clear, 2 to 3 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the slow cooker and shred.

  • Add Neufchatel cheese to the slow cooker and stir until melted. Return chicken to the slow cooker and cook until warmed through, 20 to 30 minutes more.

I wish you had a rating higher then Five stars. This recipe is excellent! I did add black beans and kidney beans because my daughter said otherwise it wasn’t taco soup. I added more taco seasoning, and I used cream cheese instead of what they recommended. It’s what I had, and the stores are pretty bare. I highly recommend this recipe Read More

This recipe was excellent. I didn’t change a thing. My wife has 0 tolerance for spiciness. She took one bite and declared it was too spicy for her. I, on the other hand, thought it had the right level of bite to it. I have to eat the whole batch myself...tough job but someone has to do it. Read More

I made this tonight but in my instant pot. Sauteed the onion and green pepper, then added all the other ingredients except the cheese, and I didn't bother coating the chicken - just dumped in the spices. Set to 15 minutes with a 10 minute natural release then quick release remaining pressure. I changed to vegetable stock because it's what I have that is gluten free for the celiac in the family, and added a can of black beans. I had about double the chicken and it made 8 servings. Like others I used cream cheese, too. It was a total hit and most of us had seconds, and I was asked to make it again. Read More

This was really good. I used costco's shredded rotisserie chicken breasts and regular cream cheese. We added crispy tortilla strips to the top when we served it . They were a great addition. I cooked it on the stovetop since the chicken was already cooked. Family loved it and there was less than a 1/2 cup left. I've been told to save this one! Read More
