  • Combine tomatillos, onion, water, and garlic, in a saucepan. Cover and simmer, turning occasionally, until tomatillos turn slightly brown and become soft, 15 to 20 minutes. Add more water as needed, 1/4 cup at at time. Add chipotle peppers, salt, pepper, cumin, and oregano; mix to combine.

  • Pour saucepan contents into a blender and blend until smooth. Allow to cool before serving.

Cook's Notes:

You can add more or less chipotle pepper to your liking.

Other options are:
Add juice of 1/2 lime, 1 tablespoon sugar

, 1 bunch cilantro, and/or 1 teaspoon apple cider vinegar.

This was really good - and 1st time I used tomatillos. I was looking for a recipe w/ chipotle peppers & adobo sauce since I had some left over; cut the recipe in half and added some of the suggested extras. I think I may have added too much water; the sauce was on the thin side, but the taste was spot on. Next time, I may simmer a little longer and take the lid off half way thru...
