  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 20 to 30 minutes. Drain and mash in a large bowl.

  • Add buttermilk, butter, bouillon powder, dill, salt, and pepper and mash until creamy.

Cook's Note:

Feel free to use margarine instead of butter and dried dill instead of fresh (though fresh is better).

Mine didn't necessary turn out creamy but they turned out excellent. My potatoes were quite large and could have used more buttermilk but I struggle with mashed potatoes in general and was afraid of them turning gluey so I didn't add any more. I think a weight for the potatoes would be good seeing how potatoes vary in size. Unfortunately I did not weight mine so I can not help there. Although mine came out looking somewhat dry they were not and they were loaded with flavor. The dill really sets these apart from all others and they most definitely did not need gravy. I don't think I want to make mashed potatoes in any other way after tasting these. The dill is not overpowering at all. I might not salt the potato water next time as they were a bit saltier than I prefer. I might also add black pepper and cut back a bit on the bullion. Read More
