  • Place chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove and set aside to cool.

  • Meanwhile, beat cream cheese in a bowl with an electric mixer until creamy. Gradually beat in powdered sugar and rum; mix until well combined. Beat in melted chocolate.

  • Roll mixture into small balls and roll in chopped nuts. Refrigerate until firm.

Cook's Note:

If you want the rum balls to contain more rum, you will need to add a lot more powdered sugar.

Although tasty these rum balls are not worth the time and effort to make. They are very sticky and I had to refrigerate them overnight in order to be able to half-way roll them into balls. Once rolled, I again had to refrigerate them because they would not hold their shape. After another hour they were cold enough to roll but the nuts would not stick. I re-rolled them and with the warmth of my hands they softened enough to roll in the nuts. But then again they would not hold their shape. Again I refrigerated them and once cold I pushed them into balls. But within 5 minute they were again soft and gooey.
