So yummy! I was pleasantly surprised with the herbs in this. My family ate both of these quiches in 2 days! I liked serving it with a little side salad. And it’s good for breakfast, lunch, or dinner!

This was a success with my family. They ate both pies! I only used six of the eight eggs only because I may have included too much sausage and the eggs had no where to go. This "mishap" did not change the delicious outcome. Also, maybe the pie crusts were too shallow? I'll be making this again and again.
I didn't have taragon. Maybe that made a difference in the taste. I added a little spinach to make it healthier. We liked it, but I think it needed a little something. Maybe more salt.
This turned out very tasty. However, it was rather mild so the next time I will use a sausage that is spicier, perhaps an Italian sausage. I suggest making sure your spices are not outdated as mine might have been. I will definitely make this again. I also used homemade crusts.
