I love this soup because it tastes just like stuffed cabbages without all the hard work of stuffing the cabbages. So simple and all in 1 large pot!

  • Heat oil in a large pot over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add coleslaw mix and onion; cook for 4 minutes. Add broth, tomatoes, water, brown sugar, lemon juice, and salt.

  • Bring mixture to a boil, add rice, and reduce heat to medium-low. Cover and let simmer until rice is tender, about 45 minutes.

Cook's Notes:

You can use ground turkey instead of beef, if preferred.

If you don't want to use bagged cabbage, shred a small cabbage instead.

Pretty tasty but on the sweet side. Recipe doesn t state to drain beef but I did. I opted to use a box of beef stock rather than broth for added flavor. It didn t seem to have much rice once it was cooked. So when making again would add more liquid and more rice. Husband really liked this! Read More

In my opinion soup is way too sweet. Luckily I was able to reduce sweetness by adding approximately one tablespoon cider vinegar AND one tablespoon salt. I did a quick perusal of other stuffed cabbage soup recipes. Others use far less brown sugar (e.g., one teaspoon) or none at all. Read More
