Kale, White Bean, and Sausage Soup
This is a delicious simple stew--the kielbasa lends almost a buttery taste and texture. Inexpensive & very easy to prepare. Even my husband who hates soups asked for this one!

If you want to serve as a side dish instead of a soup, reduce liquid by reducing broth to 2 cups and draining beans before adding.
I like to use grape tomatoes. Baby spinach can be used in place of kale, just add it in during the last few minutes of cooking and cook until wilted.
