  • Cook sausage in a nonstick skillet over medium heat until skin is crispy and a little browned, 5 to 7 minutes. Remove from heat and chop into bite-sized pieces when cool enough to handle. Reserve the pan drippings.

  • Meanwhile, combine chicken broth and garlic in a stockpot over medium heat; bring to a simmer.

  • Add chopped kielbasa, reserved pan drippings, undrained cannellini beans, chopped kale, diced tomatoes, olive oil, and oregano. Cook until beans begin to pop, 25 to 30 minutes. Season with salt and pepper.

Cook's Notes:

If you want to serve as a side dish instead of a soup, reduce liquid by reducing broth to 2 cups and draining beans before adding.

I like to use grape tomatoes. Baby spinach can be used in place of kale, just add it in during the last few minutes of cooking and cook until wilted.

Loved this! Not only was this simple with few ingredients, it had a ton of flavor! I honestly thought this would need a good deal of salt to taste but it didn't need any only some pepper. I did sub spinach for the kale as the recipe submitter mentioned in the cook's notes just because we prefer it. You could throw in other veggies you have on hand but honestly it didn't need it as far as flavor goes. Excellent recipe! Read More
