I made ehe shrimp enchilads as close as an old (80 years) man can do. I made this once before and it was delish. Delish. Delish. I came up short on the tortillas so I had to store some until I can get more. Thank you to all who participated.

The dish was delicious but the recipe was a lot. I’m a new ish to cooking and that was a lot for me to handle.
The subs I made was "some" blackened seasoning for the chili powder and cheddar cheese for the muenster. The only issue was the bottom of the tortilla was a bit tough versus the top because of the sauce. Maybe sauce the bottom of pan?
Really good! This is not for someone on a diet but it is pretty tasty! I used a whole red pepper and small onion vs 1/2c ea and if I could go back, think I would have also added a tsp of cumin and a dash of cayenne in step 4; not because I felt any flavor was missing but to make the flavors more complex. I also used jarred jalapeños that I diced vs fresh for a little more heat. Glad to have tried this and would make again to mix up my Mexican meals! Thank you Mark!
