Boneless chicken made this easier and quicker. I served it over rice, and garnished with Parmesan. The tomato flavor is what I noticed, more than any other, even with my one change. I used chicken broth instead of tomato juice, and I'm so glad I did. Six ounces of tomato paste was a bit too much, for our tastes, and the tomato juice would have added even more tomato flavor.
