  • Preheat the oven to 400 degrees F (200 degrees C). Line a large rimmed baking sheet with foil.

  • Place slices of bacon on the prepared baking sheet.

  • Place bacon in the preheated oven and bake until partially cooked, but still pliable, about 8 minutes. Remove from the oven, and reduce temperature to 350 degrees F (180 degrees C). Let bacon rest until cool enough to handle.

  • Spray 6 cups of a muffin pan with cooking spray.

  • Whisk eggs together in a medium bowl. Wrap a slice of bacon around the inside of each prepared muffin cup. Divide Cheddar cheese amongst the 6 muffin cups and top with beaten egg.

  • Bake in the oven until eggs are set, 13 to 15 minutes.

i couldn't help myself, made a few changes. I had some chopped red and yellow bell peppers and onion so I sauteed them with a little garlic while the bacon was cooking in the oven. I had 8 strips of bacon so I mixed 7 eggs, 2 Tbl. fresh cream, salt and pepper. Placed the bacon, small spoon of pepper mixture, cheese, then egg mixture. Sprinkled a little dried thyme and a grind of pepper on top and baked per directions. So good, i'll make them again. Read More

Added more seasoning to taste. Mixed peppers and onions with the eggs and also just cracked some eggs into cups with cheese on top just to see how that turned out. Very good and versatile recipe. Did bake bacon a little before placing in cups-otherwise too flimsy to get to go around muffin cup. Feta cheese also good mixed in. Will make again! Read More
