  • Season chicken with salt and pepper. Mix balsamic vinegar, soy sauce, water, and brown sugar together in a small bowl until sugar is dissolved.

  • Heat oil in a large skillet over medium heat. Brown chicken in the hot oil until no longer pink in the center, 3 to 4 minutes per side. Remove from the skillet and set aside.

  • Add mushrooms and onion to the skillet, adding more oil as needed. Cook over medium heat until soft, about 5 minutes. Return chicken to the skillet and pour balsamic glaze on top. Reduce heat to low and let simmer gently until sauce thickens slightly and chicken is warmed through, 3 to 4 minutes.

3.21.21 The first time through on a new recipe, I liked to follow the directions as closely as possible. But I should have followed my instinct on this and reduced not only the cooking temperature but the cooking time as well. It also would have been helpful if the recipe specified how the chicken breast should be cut…into strips, cubes, etc. Unfortunately, the chicken cooked at 5-7 minutes per side over medium-high heat TOTALLY overcooked the chicken, and then you add it back to the sauce at the end to warm up for another 5-7 minutes. What’s really a shame is the balsamic-soy sauce is so darned good, but the overcooked meat resulted in a less than favorable dinner. last night. But the sauce is sooooo good, and the recipe itself is so easy, that I’ll try this again reducing the cooking temperature to medium and with far less time cooking the chicken. I’m giving it 4 stars based on the tasty sauce. I know these changes will result in a 5-star rating in the future. Read More
