  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Once pot is hot, add oil, green and red bell peppers, and onion. Cook until vegetables are tender, about 5 minutes. Lightly prick sausage casings with a fork and add to pot. Brown sausages on all sides, about 5 minutes. Add tomato sauce, garlic, Italian seasoning, and salt. Close and lock the lid.

  • Turn off Saute function and select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.

  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Cut sausages on the diagonal into small pieces. Serve immediately.

The times are way off! It took almost 15 min. To get the vegies tender. Then how are you supposed to brown the sausage when the pot is full of peppers and onions? It turned out good but poor timing. Read More

1. Hard to brown sausages with all those veggies in the way; I removed them to brown the sausages. 2. I worried there might not be enough liquid in the Instant Pot, but the tomato sauce and the veggies provided plenty. Read More

This was beyond excellent! No changes! Used mild Italian turkey links. Agree sautéing veggies took a bit longer. Took veggies out of pot to brown links and put all back in. It was so good, the two of us ate the whole thing and we are not big eaters. Will definitely make again, will be perfect to make for company as well! Read More
