  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.

  • Combine flour, sugar, cranberries, walnuts, baking powder, baking soda, and salt in a large bowl.

  • Beat apple cider, eggs, and vegetable oil in a separate bowl until frothy. Mix apple cider mixture into flour mixture until moist; pour into the prepared loaf pan.

  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes.

Cook's Note:

Use any combination of mixed nuts in place of the walnuts, if you'd like.

10.27.19 I baked in three mini-loaf pans for 35 minutes at 350ºF and probably should have checked for doneness at 32 minutes as they turned out just a bit dry. But that s my fault not the recipe s. Really didn t get the tang from the apple cider that I was looking for but I did like the sweetness of the cranberries and the walnuts enhanced the texture. The distinctive flavor is the cranberries and honestly in the end this doesn t taste that much different than other quick breads that I ve made with nuts and dried cranberries. I had a couple very ripe bananas on hand and I think the addition of one of them may have added some moistness to the texture and that s not meant to be a negative because this is good bread! I used. craisins because that's what my husband grabbed and I used sliced almonds as well the texture is a bit like corn bread and I lo e thst.also, it's not too sweet. A solid four stars! Read More

Delicious, easy and fun to make. I used home-made apple cider that was a little less than fresh. The baking removed all hint of fermentation and left a delicious apple flavor. The dried cranberries I used were sweetened. I plan to make this again to use up more cider and to try different fruit and nut combinations. Read More
