  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. Place croissant cubes in a medium mixing bowl. Drizzle olive oil on top and toss to evenly coat. Stir in Parmesan cheese and garlic salt. Spread croissant cubes evenly on the prepared baking sheet.
  3. Bake in the preheated oven until toasted and light golden brown, 13 to 15 minutes. Let cool to room temperature.
