"One of many ideas for beet greens. We use our tri-colored roasting beets. Sometimes we thinly slice small beets into the dish. You can also use use the beet greens fresh chopped with any lettuce salad."

  1. Coat the bottom of a skillet with olive oil and heat over medium heat. Add beets and saute for 2 to 3 minutes. Add bell pepper and saute for 2 to 3 minutes. Stir in garlic and cook until fragrant, about 2 minutes. Mix in beet greens and season with Greek seasoning, salt, and pepper. Cook until beet greens are wilted, about 5 minutes. Serve immediately.
