- Coat the bottom of a skillet with olive oil and heat over medium heat. Add beets and saute for 2 to 3 minutes. Add bell pepper and saute for 2 to 3 minutes. Stir in garlic and cook until fragrant, about 2 minutes. Mix in beet greens and season with Greek seasoning, salt, and pepper. Cook until beet greens are wilted, about 5 minutes. Serve immediately.
