My fiance loves chicken salad, but it's not for me, so i always end up throwing out extra servings that other recipes make. So, I made a single serving one day and am sharing my recipe so you don't have to waste extra servings either! If you like your chicken salad crunchy, add some cashews! Serve as a sandwich or on top of lettuce!

This was fantastic! The only issue I had was the amount of paprika. 1 teaspoon would be way too much, so I only used 1/2 teaspoon and that was perfect. I loved the addition of the egg. I know this is for one serving, but I really wish I would have doubled the recipe so I had leftovers. This made the perfect lunch. Read More

I live alone so making chicken salad with leftovers isn't really a great thing since I typically don't eat leftovers. I followed the recipe exactly. I found the paprika makes for a great addition as does the egg. I don't use the low fat anything my BMI is 22% so I'm not really worried about fat content. Great recipe! Read More

Nope, as I thought, boiled egg works with tuna well, but ruins good chicken. To me, chicken is finer fare, worthy of finer accompaniments. It's not a blend, just this awkward mushy thing in my chicken salad. Get it out! Great easy recipe for a quick lunch or light super. The addition of egg adds the perfect touch that rounds out taste and texture. If inclined you might want to add a variety of chopped accents like celery, green onions or bell pepper + one teaspoon of lemon juice.
