Kohlrabi Noodles with Bacon and Parmesan
These flavorful low-carb kohlrabi noodles topped with bacon, onion, and Parmesan will turn anybody into a kohlrabi lover! The natural sweetness of the kohlrabi marries perfectly with the other ingredients, for a side dish that's a change from the usual.
I used kohlrabi that are 8 to 10 ounces each.
If there is not enough bacon grease to reserve 1 tablespoon, you can use olive oil.
These also make a great low-carb alternative to hash browns; simply cut the noodles into short lengths before frying.
