My 6-year-old, who is incredibly picky, describes this as 'alicious.' Two nights ago, we were at the tail-end of our food and I decided to throw some things together and experiment. I didn't expect the kids to like this, but to my surprise, we had it two nights in a row. They LOVE it.

I will definitely make these again. I did make one substitution. The substitution was to substitute two medium-sized avocados for the two eggs as the binder. I increased my heart healthy nutrition this way. If protein is your concern, only substitute one egg. also, I plan to add in a little jalapeno or chipotle pepper next time and cream cheese for the mayo. Read More
