This was so yummy! My city has been hit hard by panic buying so I had to make a few omissions because items aren’t available. I did not have flour, just did without. I did not have stock, but the zucchini and cherry tomatoes released plenty of liquid. One thing that’s plentiful in the store was sun dried tomato pesto - I’ll probably go back and get some more now that I’ve found a great recipe. Family loved it, it gave us a comfort meal at a time we very much need comfort. Thank you for the recipe!

If my family could give this 6 stars we would! The kids especially loved it and couldn’t wait to eat it after the way it smelled while cooking. I served it over angel hair pasta.
I want to try this but cant seem to find tomato pesto what are suggestion for its replacement.
This was a hit! I decided to bake the chicken separately, so I made a few changes. I started with olive oil and one yellow onion in a pan with the garlic. Then added 2 cubed zucchini and 1 cubed yelllow squash. Also threw in 2 bell peppers and some spinach with the grape tomatoes because I had them on hand. Finally, I added 2 spoonfuls of cornstarch to the chicken stock before adding it so that I could get a thicker sauce to serve over angel hair. Overall, the ingredients all worked together incredibly well and it was a colorful meal.
Followed recipe exactly as written. We loved it and had plenty for the next day.
Great recipe but needs a little kick. Will add some heat next time. Also sauce needs to be thickened a little bit.

We really enjoyed this dish served over jasmine rice; the only modification was using no-salt chicken broth. Next time - yes there will be a next - I will rethink the mixed veges, find something without lima beans (for my husband)! Amazing flavor.

This is a great recipe. I love Italian food and this was quick and easy. I did add extra Italian spices and used Parmesan cheese (we didn’t have mozzarella). The pasta cooked fine in the liquid, no need to cook separately. Will definitely make this again.
Easy recipe and tastes like an experienced chef has made it. I didn’t have zucchini on hand so I used broccoli florets and I didn’t have sun dried tomato pesto so I used regular basil pesto instead. Tasted amazing!
This was great! I pretty much followed the recipe, only I always spice up the chicken with my own concoction of seasonings no matter what the recipe it is (I always use paprika, usually garlic powder unless the recipe calls for fresh, season all, and Italian seasonings...it takes a lot to over spice it. You can get away with all different seasonings. I threw in some spinach and it came out scrumptiously.

This recipe was delicious and my family really was impressed and loved it. I put it over thin Spaghetti added a little more of the ingredients to double my batch.
This was really delicious! I did make a few minor changes though. I used thighs rather than breasts, seasoned the flour additionally with Italian seasoning and lemon pepper (plus more lemon pepper later). I used about 3 1/2 T. of the sundried tomato pesto. I cubed equal halves of zucchini and yellow squash, and added about 1 1/2 C. sliced mushrooms. I also substituted wine for 1/4 C. of the broth. The white wine made a big difference! Served over angel hair mixed with a little olive oil, Italian seasoning, and garlic salt and topped it all with parmesan. Will definitely make this again!
