Ingredients

  • 1 tablespoon olive oil

  • 1 ½ cups chopped yellow onion

  • ½ cup chopped carrot

  • ¼ cup chopped celery

  • 1 tablespoon chopped garlic

  • ½ teaspoon dried thyme

  • 4 cups vegetable broth

  • 3 cups cooked white beans

  • 1 (6 ounce) package Canadian-style bacon, cut into 1/4-inch cubes

  • ¼ cup pesto

Directions

  1. Heat oil in a pot over medium-high heat. Saute onion, carrot, and celery in the hot oil for 5 minutes. Add garlic and thyme and cook for 1 minute. Add broth, white beans, and bacon. Bring to a boil; reduce heat and let simmer for 5 minutes.

  2. Serve topped with pesto.

Cook's Note:

You can freeze this after adding bacon to prepare later.
