  1. Crumble ground beef into a 4- to 5-quart pot. Add chiles, onion, and vinegar; cook on high heat, stirring occasionally, until beef browns, 5 to 10 minutes. Add chili powder, garlic, oregano, cumin, and cocoa powder; stir for 1 minute.
  2. Add crushed tomatoes with their juices. Mix in tomato paste. Add kidney, black, and pinto beans. Bring to a boil. Reduce heat, cover, and simmer, stirring occasionally until flavors combine, about 15 minutes. Season with salt. Serve with pepper Jack cheese.


  • Cook's Note:
  • Substitute Cheddar cheese for the Monterey Jack, if preferred.
