  • Whisk honey, soy sauce, lime juice, garlic, and cilantro together in a large glass or ceramic bowl. Add chicken and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 to 4 hours.

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.

  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.

  • Grill chicken on the preheated grill until no longer pink in the center and the juices run clear, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I didn't love it on its own but I think the chicken would great as part of a dish (chicken wraps or on top of salad etc) combined with other flavors. That's not to say it didn't taste good the flavors just didn't pop as much as I would have liked. When I mixed up the marinade I did find it to be delicious though! I marinated the chicken for the minimum 1 hour however I would suggest going longer than that for maximum flavor. Also take care grilling the chicken; the honey tends to want to burn.
