  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.

  • Mix Brussels sprouts, bacon, onion, olive oil, garlic powder, cayenne, and salt together in a large bowl. Spread evenly on the prepared baking sheet.

  • Roast in the preheated oven until bacon is crispy and reaches 145 degrees F (63 degrees C), about 40 minutes, stirring after 20 minutes.

  • Remove from the oven. Toss with pine nuts and serve.

4.24.20 This will be the last time that I roast bacon and onions with brussels sprouts @ 400ºF because literally, the bacon and onion burned up. Love the flavor that they lend to this veggie, but I will saute them in a separate pan in the future, as I’ve typically done, and add at the end. Cooked for 20 minutes, stirred, checked 5 minutes later because the house was smelling like something was burning, and the bacon and onions were black, sprouts were OK. I’m thankful that I lined the baking sheet with foil, because it would have been a mess to clean up that pan. Also, I think this needs more olive oil to bake. I will say that I liked the little kick from the cayenne, but it wasn’t enough to entice me to make this recipe again. Also, the pine nuts would have been better toasted. Sorry for less than favorable review, but this was a disappointment, just didn’t work out for me today. Read More
