  • Preheat the oven to 350 degrees F (175 degrees C).

  • Heat a large nonstick skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.

  • While beef is cooking, mix together evaporated milk, cream of chicken soup, and cream of mushroom soup in a bowl. Set aside.

  • Transfer drained beef to a 9x13-inch baking dish. Spread corn evenly over the beef. Layer potato nuggets over the corn. Pour evaporated milk and soup mixture over the potatoes.

  • Place in the preheated oven and cook for 45 minutes. Top with Cheddar cheese, return to the oven, and cook until potatoes are golden brown and cheese is melted, another 15 minutes. Let sit for 20 minutes before serving.

Cook's Note:

You can season the ground beef as it cooks with any of your favorite seasonings.

The recipe states the cheese is optional but I feel it is necessary and more of it. I ended up adding double the amount in the end. While the taste was okay the corn did not belong or at least not a whole can. I also found it odd to use cream of chicken with the ground beef so I used cream of celery instead. This was just okay for us and I blame it on the corn. Read More

I was never fond of Tater Tot® casseroles, but this recipe looked interesting. I'm glad I tried it, because it's excellent. I sauteed some chopped onions with the ground beef, and added some seasoned salt and Penzy's California Pepper. Instead of the tots, I used potato "crowns". I thought two soups and a can of evaporated milk would make it soupy, but it was fine. Definitely use a cup of shredded cheese on top. Read More
