  • Line a baking sheet with parchment paper.

  • Combine potatoes and olive oil in a large bowl and mix well. Sprinkle potatoes with za'atar, salt, and pepper; toss to coat. Transfer potatoes to the prepared baking sheet.

  • Set baking sheet on the lowest rack of a cold oven and heat the oven to 425 degrees F (220 degrees C). Roast until potatoes are golden brown and tender, 30 to 35 minutes, stirring halfway through.

This recipe was easy as is. It tasted fine but I might adjust the amount of za'atar since I feel it is a bit too much for the amount of potatoes. I halved the recipe and still it seemed a lot as the flavor was a bit overpowering. Thanks for the recipe! Read More

I have made a recipe that cooks chicken thighs on the same cooking sheet with the potatoes. The recipe is the same except it has 3 tablespoons of lemon juice with the rest of the ingredients and marinate for at least 20 minutes. Delicious! I ordered the za’atar spice online and store it in the refrigerator. It is worth the price! I will make again. Read More

Thank you, Kim, for giving me the thumbs up on pairing my Stuffed Italian Meatloaf with you Za'atar Roasted Potatoes. They were delicious together! I reached for my za'atar and found that I only had about a teaspoon left, so I made a batch from my own sesame seeds and spices. I used dried thyme leaves,, tumeric, sumac, salt and pepper. So tasty!
