  • Combine 1 to 5 chipotle peppers with their sauce, onion, garlic, olive oil, juice of 1 lime, cumin, oregano, and salt in a food processor. Blend until smooth, adding water as needed if too thick. Reserve a small amount of marinade mixture to serve with grilled chicken.

  • Combine chicken with marinade in a plastic storage bag. Refrigerate for 30 minutes to 1 hour.

  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken from marinade and discard excess.

  • Place chicken breasts on the preheated grill and cook until no longer pink in the center and juices run clear, about 8 minutes per side, being careful not to overcook.

  • Remove chicken from the grill and transfer to a plate. Squeeze juice of remaining lime onto chicken and garnish with cilantro. Serve with reserved marinade mixture.

Cook's Note:

Butterfly chicken breasts by slicing up the middle, but not all the way through so that they are still attached and can be opened on the grill. This allows them to cook quicker and the marinade to penetrate easier.

Fantastic recipe! I used 5 chipotle peppers and it was the perfect amount of heat for me. Setting some of the mixture aside to use as a dipping sauce is genius - it is perfectly seasoned and packed with flavor. I think the cook time for such thin cuts is a bit long at least for my grill. I cooked mine 10 minutes total and they were definitely done - any longer any they would have been dry. You also won't need a whole bunch of cilantro! I didn't need to add any water to the sauce as the consistency was to my liking as is. I'm definitely going to be making this again. I served it with rice and grilled veggies but this would make excellent chicken tacos too! Read More

I found the chicken dried out on me a bit, even though I was keeping a close eye on meat temp to avoid overcooking. Weird since others specifically said theirs didn’t dry out. I wonder if they opted not to butterfly their chicken breasts? The flavor didn’t knock my socks off either, so this was a bit of a miss at least in my hands. Read More
