- Combine dates, sugar, milk, and butter in a saucepan and cook over medium-low heat until thick, 5 to 10 minutes. Set aside to cool.
- Add egg, vanilla extract, and salt to the date mixture; stir to combine. Add crispy rice cereal and walnuts and mix very well.
- Pour coconut into a shallow bowl. Shape the date mixture into balls and roll in the coconut.
