  • Mix together ground beef, ginger, garlic powder, and pepper until well combined. Form into 1 1/2-inch meatballs.

  • Saute meatballs in a large frying pan over medium-high heat until browned, about 10 minutes. Remove meatballs to a plate, reserving the pan drippings.

  • While the meatballs are cooking, pour juice from the canned pineapple into a liquid measuring cup and add enough water to make 1 cup. Mix brown sugar and cornstarch in a small bowl.

  • Add pineapple juice and brown sugar mixtures to the warm pan drippings. Add vinegar and soy sauce and bring to a boil. Cook until sauce thickens, 2 to 3 minutes. Add meatballs, pineapple chunks, and green pepper. Simmer until meatballs are no longer pink inside, about 10 minutes.

The sauce was very tasty! My main reason for giving it 4 stars was the meatballs themselves were a bit dry/tasteless. I will add salt, egg and breadcrumbs in addition to the spices next time to see if this helps moisten them up a bit. I added onions to the pot as one reviewer had mentioned which I thought was an excellent suggestion! I served with rice and thought it was a tasty, well-rounded dish. It reminded me a lot of a sweet and sour dish you would get at a Chinese place but with meatballs. Bonus: now the kitchen smells amazing! Read More

I added an egg to the meatballs to bind them. I followed the recipe from there on. The meatballs desperately need salt. I would guess 1/2t. I also added broccoli and cauliflower rice.
