Pumpkin Waffles with Spiced Maple Syrup

  1. Combine maple syrup, ginger, and nutmeg in a pitcher. Set syrup aside.
  2. Combine milk, pumpkin puree, egg yolks, and vanilla extract in a large bowl. Combine flour, flaxseed meal, baking soda, and salt in a separate bowl. Stir milk mixture into flour mixture. Add butter.
  3. Beat egg whites in a clean, dry bowl until very frothy. Add brown sugar 2 tablespoons at a time and beat until soft peaks form. Fold egg whites into waffle batter in 3 additions.
  4. Preheat a waffle iron according to manufacturer's instructions. Cook in the preheated waffle iron until waffle is golden brown and the iron stops steaming, about 5 minutes.
  5. Serve waffles with spiced syrup.

I added spices to the mix, rather than the syrup. Turned out excellent!

The waffle produced is a very basic pumpkin waffle and as the recipe description states, the flavor comes from the syrup (that is delicious). As written my kids were not huge fans but tweaking a...
