  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour 2 mini loaf pans.

  • Combine sugar, oil, and eggs in a bowl. Add flour, baking soda, cinnamon, and salt; mix well. Fold in strawberries and walnuts. Divide batter evenly between the prepared pans.

  • Bake in the preheated oven until a toothpick inserted into the center of the loaves comes out clean, about 1 hour.

You can use any kind of nut that you'd like.

The only substitution I made was to use fresh strawberries in place of the frozen ones. Rather than making mini loaves I baked it all in a 7" x 11" pan and it was done in exactly 1 hour. We enjoyed it and it is something I would make again. Thanks for sharing! Read More
