Simple to make and full of flavor, this sun-dried tomato pesto is one of my favorite sauces to add to chicken or pasta. I won't ever go back to store-bought varieties.

  • Combine basil, sun-dried tomatoes, Parmesan cheese, lemon juice, garlic, and salt in the bowl of a food processor; pulse until blended. Pour olive oil in slowly, with the processor running, until a paste forms. Blend to desired texture.

This is excellent. this summer is the second time I have made it with homegrown basil, Greek basil, and leafy parsley. I double the recipe and use three cups of herbs. I vary the portions depending on what is harvested I also add a third of a cup of nuts such as walnuts or pecans. I freeze it an ice cube tray. easy to use with pasta especially shrimp over angel hair or linguine Ariel several friends have asked for the recipe after I give them a sample of the pesto. Read More
