  • Combine chicken, raisins, cilantro, carrots, cashews, and red onion in a large bowl.

  • Whisk Greek yogurt, lemon juice, honey, garam masala, ginger, turmeric, salt, and pepper together for the dressing. Taste and season as desired. Pour dressing over salad and toss to combine. Serve immediately or store in a sealed container in the fridge for up to 4 days.

I swapped out a few of the ingredients based on preference and what I had on hand. I used grapes instead of raisins, left out the carrots, used slivered almonds instead of toasted cashews, and I didn't have any garam masala on hand so skipped that entirely. I also went a bit heavy with the curry powder because I love the taste of it, and added a squeeze of lemon to the yogurt dressing. It turned out delicious! I will definitely be making this again.
